The Butcher's Story

Thomas Odermatt, a third generation “Metzgermeister” (master butcher) is the “Butcher” behind Butcher’s Bone Broth. 

Growing up in his family’s butcher shop right outside of Zurich, Switzerland, Thomas learned the craft of European butchery from a very young age, and eventually brought that expertise and passion to the States.

Since 2003, Thomas has owned and operated one of the Bay Area’s most popular food trucks, Roli Roti Gourmet Rotisserie. Every day, a fleet of Roli Roti trucks serves perfectly cooked meats to eaters all over the Bay, beloved for its rotisserie chickens and porchetta sandwiches.

In wanting to feed and nourish people even further, Butcher’s Bone Broth was born. Thomas takes the same approach with his broth as he does the meats for Roli Roti: preparing everything simply, but perfectly. As the only organic fresh bone broth on the market, Butcher’s is beloved for its deeply rich flavor, naturally gelatinous texture, and for being just as nutritious as it is delicious. Thomas is looking forward to feeding people for years to come, and helping them to feel better, from the inside out.
